Wellspring Kitchen is the spot for all things related to nourishing ourselves & our loved ones, whether it is preparing food, gardening, herbs, body care …. It will all be in this space! I am having great fun playing with our fairly new Harvestright Freeze Dryer and posting about my food adventures on FaceBook. It has been lovely receiving positive feedback from friends as well as others I do not know - at least not yet! - and be able to share my culinary explorations.
I posted my Loaded Fruit Salad on Facebook recently & received wonderful feedback! This fruit salad has been a game changer for me, as it is so easy & takes less than a half hour for a whole week of YumYum! It is that good and as it takes little time, I look forward to the scant half hour it takes! I thought it would be a great start for our new adventure! I hope you enjoy it!

1 grapefruit, local apple & 2 small tangerines, all organic
Wash well, remove grapefruit & tangerine skins, core apple & cut into smallish (or whatever size you like) pieces. Put all into a biggish bowl! I also ‘smoosh’ the grapefruit to get some juice!
Now I get out all of the add-ins, such as:
Dried coconut (shreds & sometimes large flakes) & walnuts (crumbled a bit)
Dried fruit: pineapple, prunes, gogi & mulberry (if they’re too big I cut them with kitchen scissors)
Seeds: sprouted chia, flax & hemp (heaping tablespoon of each)
I sprinkle coconut flakes over all till I think ‘enough’, cut up dried fruit & measure heaping tablespoons of seeds, so there is really little measuring! When it’s all mixed up, I pour enough kombucha in so it’s kinda soupy as the dried fruit will soak up a bit of the liquid & I like moist!
Use any fresh fruits (probably not bananas), dried fruits, seeds & nuts you like!
Any juice could sub for kombucha. I love kombucha for its taste & healthy benefits! And its Fizz!
FYI. I will be exploring easy, efficient methods of removing skin from grapefruit!
